Game meats have never gone out of style in Chef Alessandro Pavoni’s home town of Brescia near the mountains of northern Italy. With Sydney’s weather getting colder what better time of year for Alessandro to showcase these fantastic (and largely under-utilised in Australia) meats that he grew up with. Together with good friend and fellow Italian Giovanni Pilu, of Pilu at Freshwater, who have teamed up with Anthony Puharich, of Victor Churchill and Vic’s Meats, to host a fabulous and unique dinner on Wednesday the 25th July at Alessandro’s one hat restaurant, Ormeggio at The Spit.
